Summer Dill Corn

Fresh corn on the cob just screams summer!  I have three favorite ways to eat corn on the cob: the "original" way--boiled, butter, salt; grilled; and, dill corn.

This recipe was born years ago after we attended a wedding where they had a cold corn salad, and it was served with a dill vinaigrette.  I kept thinking about that salad & had to make it.  Well, I never made the salad.  But I did end up with an amazing side dish.  This is a great way to use leftover corn on the cob, too!


Dill Corn

1 ear of corn per person
1 teaspoon butter
1 teaspoon dried dill {about half if you're using fresh}
Salt & Pepper to taste

Start by cutting the corn off the cob.  Then, take a spoon & run it all along the cob, scraping out any juice and leftover kernels.  Melt butter in a pan over medium heat, and add in corn & "scrapings."  Sprinkle in salt, pepper and dill, and stir until the corn is coated in butter and seasonings.  
Cook for about 5-8 minutes, until it's heated through & sizzlin'

If you use more than one ear of corn, be sure to increase the butter and dill as well....three ears of corn would have three teaspoons of butter and 3 teaspoons of dill, etc.  You get it ;)

Weekend in Words

The weather was gorgeous all weekend & we took full advantage.  Grilling and a few drinks on the deck, getting some much needed sun on this pasty pale skin....a little too much sun, my left shoulder would tell you.  I stayed out there about 50 minutes longer than I should because I was wayyy too wrapped up reading Bossy Pants.  Hilarious--you should read it.

I decided to stay indoors on Sunday to get some things done & prepare for the week.  About an 1/8 of the things on my list got done before I noticed that the entire last season of Sex and the City was on my DVR.  Next thing I know, I saw Charlotte convert to Judaism, break up with Harry, marry Harry, battle infertility; Elizabeth Taylor win the dog show--on her period!;  Miranda get the chicken pox, meet the doctor, break up with the doctor, marry Steve, move to Brooklyn; Samantha with Smith, Samantha and cancer & Lil Kim's wig; Carrie with Burger, Carrie with the Russian Lovah, and then, finally, Carrie with Big.  Needless to say, I was a hot hormonal mess with a snoring dog, two loads of unwashed laundry, and only frozen meat.

It was pretty much the perfect Sunday.  I hope yours was equally as amazing.

Anniversary Recap & Misc. Summer {Five on...Saturday?}

So glad to see another weekend roll around!  A little late linking up my Friday Five with April and the girls, but better late than never!

{one} We had a wonderful, low key anniversary!  We try to follow the traditional anniversary gifts by year, with a creative twist.  O did quite well the leather gift this year, giving me this beautiful leather Pandora bracelet!

I got him a new fishing rod...we'll pretend that has some leather on it somewhere ;)

{two} The anniversary festivities continued last night at our favorite Japanese Steakhouse!  We've accidentally made it a tradition to go there & celebrate each year.  We did it the first two, may as well keep it up.  I ate my weight in Yum Yum Sauce, flying Shrimp & Onion Volcanoes.

Let's talk about summer...first, two good things:

{three} Freshly painted Coral toes.  I'll most likely have this on my toe nails all summer long.

{four} Bare legs.  Which, if you're me, isn't always a good thing.  But I secretly started using O's Shave Butter from The Dollar Shave club, and I'll never use anything else.  Guess the secret's out ;)

AND, a bad summer moment from the week:

{five}  I'm COVERED in mosquito bites!  Arms, elbow, thigh, foot.  You name it, I've got a bite.  And they've sticking around even a week later.  Any ideas on how to make these disappear...AND, stop itching?!

Pineapple Craze

It must be true what they say about your taste buds changing every seven years..."they" do say that, right?  I've never been much of a pineapple girl {except when it's blended into a Pina Colada...} but I recently gave it another try and I CAN'T.GET.ENOUGH.

If you follow me on Instagram {@amparsons29}, you saw that I was having one heck of a time chopping that sucker up over the weekend.  I eventually got it all cut up...  I've been eating it diced up as a snack & even grilled.  But my latest pineapple obsession?  In the form of creamy Sorbet.

With the extra day this weekend & the amazing summer weather, I decided to dust off {literally...} the ice cream maker and turn my new favorite fruit into a healthy {??} dessert!


Pineapple Sorbet

2 cups fresh chunked pineapple
2 tablespoons honey
1/4 cup pineapple juice {or water, orange juice--any liquid!}

Put all ingredients in the blender or food processor, and blend until smooth.
Pour into ice cream maker* and blend for 7-12 minutes.  Pour into a freezer safe container &


The first time I made it, I attempted to make it a little healthier by using two tablespoons of honey in place of the simple syrup.  It was good, but there was a very noticeable honey after taste.  Which wasn't bad, but I was going for full on pineapple flavor.  The second try recipe, above, was the winner for me!

*We have the KitchenAid Ice Cream Attachment that fits our mixer & I LOVE it!

Memorial Day Weekend

Talk about a relaxing, productive weekend!  I accomplished about 50% of the things I mentioned on Friday.  We did not make it to Taste of Cincinnati, I was off the hook for fishing {apparently, I talk too much...} and poor Iz still looks like a muppet.  But, we DID end up deep cleaning the whole house, grilling out, enjoying the weather & knocking out some DIY projects, which included:

AND we may have taken advantage of the Memorial Day Sale at Home Depot & bought a new fridge!!  This will finally finish up the kitchen & we'll have matching appliances for the first time since we've lived here!  I can't wait for it to be delivered next week.  I've already started thinking about how I'll organize it.  #nerdalert

I'm off to enjoy the last bit of sunshine on the deck, with freshly painted toe nails, a hot dog and a cold beverage ;)  Do we really have to go back to work tomorrow?!

Five on Friday

First, thank you to everyone who commented and emailed with kind words after my post yesterday :)  It's amazing the connections blogging will bring you, and more support from friends you've never actually met in person--y'all are the best!

NOW, let's talk about this three day weekend!  I am SO glad to have a few relaxing days off!  Linking up my low key weekend plans with April & the girls!

We might stroll downtown for the Taste of Cincinnati.

I plan to spend a lot of time on the deck, enjoying the gorgeous weather, and ONLY using our grill.  On the menu?  Grilled Flank Steak with Chimichurri Sauce

Tackling a few DIY projects that have been lingering on my to-do list for far too long & doing a little belated spring cleaning.  I think this list should cover it...anything I should add?

What's going on...

....ORRRRR what's not going on.  I've been a bad blogger these last few months, and I promise there's a reason.  It's not a good one.  In fact, it's a really crappy reason.  I hate to be a Debbie Downer, but I try to keep things real around here.  So here's the deal: for the past 17 months we've been trying to have a baby.  Without any success, obviously.  My free time has been spent at doctors appointments, general moping, way too much Googling and working a second, part-time job to help cover these medical expenses.  {Side note: don't get a part-time job at your favorite clothing retailer.  You'll spend all of your paycheck, and then some.}

But, really.  I've struggled for months if I wanted to share this not-so-fun detail of our life.  No one wants to read about that stuff.  Except for me.  And other women who might be walking that same, dark path.  This blog documents our life.  And whether I like it or not, this is a big part of our life right now.

At the beginning of 2013, we decided we wanted to start a family.  I didn't think it would happen immediately and I knew it could take some time.  After all, some of my best friends struggled with infertility, and I saw their difficult journey.  So we threw caution to the wind and said "what happens, happens."

Fast forward 10 months, I was at my yearly visit, and it was NOT happening.  I brought it up to my doctor and she decided to do some blood work.  Lo and behold, I wasn't ovulating.  She decided to start me on fertility medication.  To be honest, I was pretty excited.  Drugs to make me ovulate?  Surely I'll get pregnant now!  Two months of tears, mood swings and 8 million hot flashes later, I {we...} we over Clomid.  And STILL not pregnant.  My doctor referred us to a specialist at that iconic one year mark.

We went to see the specialist at the end of 2013, he ruled out a few more things and determined that the problem is me.  My body just can't get with the program, on a few levels.  So we start a different fertility medication, with less side effects {yay!} injections, and monthly monitoring via ultrasound. Now, THIS will definitely get me pregnant!  Three months of this routine, I officially felt like a science experiment, and STILL no baby.

That brings us to where we are today.  We're starting a new treatment plan, one that I hope will be the answer to our prayers.  I'm so incredibly thankful for an amazing doctor, who we trust.  Friends who listen to me cry, check in with me often and know exactly how I feel.  Supportive family members...my sweet momma who cries right along with me each month when I find out I'm not pregnant.  My husband!  Oh, this guy--he's come to every appointment, put up with my irrational mood swings and has become a master shot giver ;)

So why share all of this now?  I needed to get it off my chest!  I've prayed day in and day out for 500+ days for God to bless us with a miracle, and I have faith that He will.  It is most certainly in God's hands now.  Actually, it always has been.  If you're a prayin' kind of girl, would you keep us in your prayers?  Please?  We can use all we can get.  And if someone reading this is going through something similar, please know that I pray for you!  It's a very lonely feeling, but know you are SO strong.  Stronger than you think.  Everyone can use this reminder, no matter what season of life you're in.

Three Year Houseaversary

Three years ago today, on Friday the Thirteenth, we were sixteen days from getting married and full of SO much excitement as we closed on our first home.  On that day, I had no idea all our house would "see."



This little house has been through a lot with us these last three years.  We moved in engaged and returned as husband & wife.

Not only has our little house endured countless cosmetic updates, but has survived my many DIY and Pinterest fails.

It housed us for two-thirds of O's Law School career, which we surely wouldn't have lived through in our tiny apartment.  It's seen me through job changes and tears over things that are out of my control.

This was Izzie's first yard, and Shelby's only home.

We've spent summer nights grilling out on the deck, drinking and laughing uncontrollably with amazing friends.

All of these things have made our little house a home.  Here's to many more years in our little ranch, filled with even more happiness, if that's even possible.

Five on Friday

Forgive me for being a bad blogger these last few weeks.  I've finally come out of hibernation now that the weather is warm again ;)  My evenings after work have been spent on the deck, soaking up the sun with a cold beverage!  Speaking of cold beverages...is it 4pm yet?

I tried the Strawberry last night, and I'm still trying to decide how I feel about it...

Because, in all reality, I want to redecorate all of them.  It's a sickness.

The outdoor pool at our gym opens this weekend; aka: the only reason I joined said gym.  
There's nothing quite like lounging at the pool.

Cinco de Mayo Menu

We LOVE Mexican food!  So naturally, I go all out with my Cinco de Mayo menu.  Here's what we'll be eating tonight:


Chicken Fajitas, with homemade Fajita Seasoning

And my FAVORITE {easy!} Margarita recipe:
Into a blender, add:
1 can of frozen limeade, slightly defrosted.
Using the limeade can as a measuring cup, add in:
1 can of Tequila
1 can of Triple Sec
1 can of water

Fill the blender full of ice & pulse until slushy.  Enjoy!

Served up in these gorgeous glasses that were on our wedding registry.  
I specifically had Cinco de Mayo in mind when I was scanning away at Crate & Barrel.

Five on {Derby} Friday

I apparently spoke too soon a few Friday's a go when I mentioned that I was "back."  Now that the sun is out & the winter jackets are put away, I'm finally out of hibernation.  I've been crossing house projects off the to-do list, planning weekend trips, and just enjoying the warm weather!  BUT, it's a big weekend here in Kentucky.  Tomorrow is the DERBY!

Meal Plan Monday

What a busy, fun weekend!  I hope everyone had a wonderful Easter!  We enjoyed time with family, and a little date-day to Keeneland on Saturday.  We didn't cash any big tickets, but it's always fun putting on a pretty sundress & watching the horses.

The weather looks gorgeous all week long, so that means a whole lotta grillin' this week!  I've only planned four weeknight meals, because someone promised me a date night this week ;)

Five on Friday!

I've seriously missed linking up with April and the girls for 5 on Friday the last few weeks!  Between weddings and illness and Gone Girl and LIFE, time is just flying by!  Here are some highlights from the last few weeks!

{one}  I'm attempting to get my life back in order & the itsy bitsy Sugar Paper planner I bought at Target back in January just wasn't cutting it.  I need a LOT of space in a planner.  Kacey said she recently purchased the Whitney English Day Designer, and the pics she emailed me were enough to seal the deal.

This thing is impressive, and I'm not gonna lie...a little frightening ;)  Life=Organized.



{two} The last few weeks included a lot of snuggles.  Including lots of time with our sweet puppy--here, tuckered out with her favorite ball {which, btw, is a racquetball...?} How cute is this little face?!


{three} Dare I say, that spring might be here to stay?!  I snagged these cute lace shorts at Loft recently, and can't wait to wear them!


{four} Mad Men is back!  And I'm SO sad its the final season :(  Does anyone else watch?!


{five} Can we talk about how AMAZING my friends are for a second?!  After a rough week, my fav's, Abby & Rebecca, surprised me by dropping off the sweetest care package to cheer me up!  So SO thankful to have them ;)

Outfit Planning

I'm a planner.  I realize that's not "news" to anyone here...  I plan our dinners, I plan out all the home/DIY projects I'd like to accomplish, I plan my blog posts {usually...} AND, I plan my outfits weekly.  A little crazy?  Maybe.  But nothing stresses me out more at 6am in the shower while laying in bed, procrastinating, than the question that plagues us all: "what am I going to wear today?"

I can say with 100% certainty that I am out the door on time in the morning, if not earlier {GASP!} when I have planned my outfit for the day.  It really alleviates the rushing around, clock-checking, and stressing.  Am I the only person that has this problem?!

On Sunday's, my designated day to get stuff done, I check the five-day forecast.  Based, loosely, on what the temps look like, I start to pull things out of the closet & drawers and build a few outfits for the week.  I lay it all out on the guest room bed, make sure I'm not wearing polka-dots two days in a row or too much black {or in this weeks' case, pink...} and then call it done.


I'm VERY fortunate to work for a company that allows us to dress down everyday.  Jeans & flats are a daily standard.  As long as you look "put together" you're A-OK!  There are certain days when the big-wigs are in the office or we have to meet with clients that I have to bust out the black pants & heals, but it's rare.

I'll hang everything back up with necklaces and accessories in a small section in the closet.  In the morning, all I have to do is throw it on.  No thinking.  I refuse to think too hard before finishing my coffee :)

Meal Plan Monday

I can finally get back to living life again, since I finished Gone Girl over the weekend!  It really was a good book and I'd definitely recommend reading it, but I'm anxious to see how the movie compares once it's out this fall!

I remember being a little girl, and going shopping with my mom for a new Easter dress every year.  And then new shoes, hat and more to go along with it.  25+ {ew.} years later, it's still just as much fun. {One?} on Friday

I'm so sorry to skip my 5 on Friday this week. I am up to my eyeballs in laundry, dishes, and a filthy house all because I can't put this book down.



Y'all, this book! If you haven't read it, you need to. I started it a while ago & it had a bit of a slow beginning, but it picks up. Fast. 

Now I refuse to do anything but read. Hence the disorganization on the homestead. It's amazing that I even made it to work today...

Easter Bunny Inspiration

I'm seeing SO many cute little Easter ideas running around Pinterest, and the Easter section at Target about had me in tears.  I seriously can't wait for the day when we have little one's to make Easter Baskets for & reasons to go all-out on the holiday decor.  Until then, O & the pups will continue to get pretty awesome baskets from the Easter Bunny!




One of my favorite bloggers, Jessica, did this for the hubs last year.  I think I'll def be doing this for O this Easter :)

Meal Plan Monday

I'm not gonna lie.  I'm glad today is the last day of March.  In like a lion, out like a lamb.  My ass.  I need some warm weather in my life.  I seriously can.not.wait to sit out on the deck after work, have a cold beer & eat dinner al fresco!  Until then, here's what's on the menu for our indoor, in front of the TV, coffee table eating...

Five on Friday!

I still don't feel caught up from being gone last weekend, but my dancin' feet are finally feeling normal again, and I'm ready for another Five on Friday with April and the girls!

{one} Big game tonight.  Big BIG.  We're playing our rival team & I couldn't be more nervous excited.  My anti-Louisville coworkers and I will be enjoying UK brownies at work today in honor of the game.

{two} I have a slight problem buying random ceramic things.  This one in particular.  I plan to take the berries I buy out of the plastic thing that looks just like this ceramic thing, and then keep them in the ceramic version.  {that is how I explained the "need" for this new container to my husband.  Verbatim.} 

{three} I'm almost afraid to say it, in fear that I'll jinx us, BUT....I think Spring is here.  Maybe...  Now watch.  It'll snow next week.

{four}  Y'ALL.  I was SO pale before the wedding last weekend.  I hightailed it straight to Sephora & picked up the St. Tropez Self Tanning Mousse.  It is FOOLPROOF.  It gave me a nice little base & I didn't look too pasty...  I will def. be using this again.  Worth every penny. 


{five}  I'm about to down four more cups of coffee because I stayed up wayyyyyy too late watching Scandal last night.  I swear, best show on TV.

Best of: Nails

A good manicure is just the icing cake.  The perfect finishing touch!  So I thought it would be fitting to wrap up my Best of series with my favorite nail products!




1:   Burt's Bees Lemon Butter Cuticle Cream has been my go-to for years.  I have one at my desk and on my nightstand, and try to apply two times a day.  It keeps my super dry hands and cuticles tame!

2.  I also keep Fine Grit Nail Files all over the place too.

3.  I loved Essie's Grow Stronger base coat when I was trying hard to grow my nails out & stop biting!

4.  I pretty much exclusively use Essie Nail Polish.  Favorites for my hands include Ballet Slippers and Allure and for the Piggy's Smokin' Hot, Mint Candy Apple and other fun seasonal colors.

5.  Dry time is the worst.  Essie's Good to Go helps speed things along!

6.  I mentioned this Sally Hansen Hard as Wraps base coat a few Friday's ago.  It really has made my manicure last so much longer!  I can really get away with going a week without noticeable chips!

My normal routine:
-File {buff if needed} and apply cuticle butter and hand cream.
-Swipe an alcohol soaked cotton ball over my nails to remove any residue.
-Apply one coat of Hard as Wraps, let dry approx. 2 minutes.
-Apply one coat of polish, and let dry about 3-5 minutes.  Apply a second coat if needed, and dry the same time.
-Apply one coat of Good to Go.

I took a tip from my blog pal, Emily, and surf the iPad for about a half hour while I really wait for them to dry.  That way I can really be sure they won't be ruined.  Because ruining your nails as soon as you do them is the WORST!

Weekend Recap

So sorry for the silence these last few days!  I hated to skip out on my Friday Five last week, but I had a great reason.  One of my bests got MARRIED!

I was so honored to be a part of their special day & spend the weekend celebrating with some of our favs!






















Between the long drive back to Kentucky from Virginia, and numerous March Madness games, I could barely hold my eyes open past 8pm yesterday!

Speaking of March Madness.....how 'bout them Wildcats?!?  My bracket is looking better and better these days!  I'm pretty sure my DIY door hanger brought us our latest winning streak ;) 

Keep your fingers crossed for a W on Friday against Louisville.  Or else poor O may go into a funk until Derby weekend...

Best of: Hair Tools

Good hair products are only as good as the tools you pair them with.  I'm a firm believer in that.



{1} The Vented Ceramic Brush is my first line of defense when I start to dry my hair.  The vents allow air to travel through, helping me rough dry just a little faster.

{2}  On days when I actually want to curl my hair, I reach for the BaByliss 1 1/4" Curling iron.  If it can create a curl that will hold in this mane, it deserves an award.

{3} My old trusty friend, the Chi Ceramic Flat Iron.  This bad boy has been with me since my sophomore year of college, survived almost daily use, has been dropped numerous times and even had a trip in the toilet once while plugged in.  It is the best tool I've ever owned.

{4} If my raving about Drybar wasn't enough in this post and last week, let me give you a little more.  This brush!  The best I've ever used.  It is the perfect size, actually helps dry my hair a little faster, and creates enough movement that lasts all day.  Worth every penny.

{5} O gave me this hairdryer a few years ago for Christmas after my previous one kicked the bucket the night of my work holiday party.  Wet hair in December was borderline traumatic.  I digress...  This guy knew what he was looking for, because this Conair dryer is the best hair dryer I've ever used!  So good, that my momma went out and bought the same one after she used mine.  Top five gifts he's ever given me.

The thing with hair tools is, they're usually a little bit on the expensive side.  I'll tell you this: I've killed more straighteners, curling irons and blow dryers than I care to count.  But once I started investing in quality tools, I stopped ruining things and replacing them.  Take the Chi for example...it went in the toilet.  THE TOILET!  And lived to tell the tale...

Meal Plan Monday

I love weekends like the one we just had.  The weather was amazing, we took care of a bunch of errands, started a few projects, and UK 

Highlight of the weekend?  We bought a new grill.  Maybe it's all the nice weather we've been having that prompted the purchase or the fact that ours was old and the bottom was rusting out.  Either way.  O was like a kid in a candy store.

So, needless to say, I'm not turning on the oven ever again.

Ok, that's a lie.  But at least for the rest of the week.  Here's our grillable dinner menu for the week:

Five on Friday

Has this been the longest week ever, or what?!  Ugh.  SOOO glad to see Friday here once again.  Linking up with April and the girls for my favorite post of the week!

{one} The weather was all over the place this week.  One day I'm on the deck, having a beer & enjoying the 70 degree weather.  The next day--literally, the next day--it was snowing.  I don't get it.

{two} If you follow me on Pinterest, you know I've been pinning a lot of doors.  I've been wanting to paint our front door for a while, but I finally decided to make this my weekend project.  I'm having a hard time deciding if I want to stay neutral or go bold.  Thoughts?!



{three} We popped into a new shop close to our house called Fom Vass--they carry oils, vinegars, wine and more!  When you walk in, it's wall-to-wall jar's FULL of exotic and interesting stuff!  We had so much fun taste testing different oils & vinegars!  I had no idea how many were out there.  We came home with an amazing light citrusy balsamic vinegar.  Perfect for summer salads!





{four}  I'm still on my mint/seafoam/sea glass kick.  Proof?  I bought these this week.
PS: THE most comfortable flats I've ever put on my feet.



{five}  I'm definitely looking forward to one of these on Monday...although it may not be green.  Do you have any fun St. Patty's Day plans?!?
